4 italian sausages (you can use either mild or spicy)
3 1/2 cups chicken broth
2 tablespoons oil
1 cup spaghetti sauce (I use the tomato basil marinara from Trader Joes)
1/4 onion
1 medium carrot
1 stick celery
2 garlic cloves
1/2 tablespoon Italian seasoning
1/2 tablespoon rosemary
1/2 cup parmesan cheese
Basil (optional for a garnish)
Steps
Dice your celery, carrot (after peeling) and onion
Cut the rosemary into small pieces
Remove the covering off the sausages and cut into approximately 2 inch pieces
Preheat a large pot on medium heat with the oil (takes about 1-2 minutes)
Next add the sausages into the pot and cook until they turn a brown color (about 5 min)
Remove your sausages from the pot onto a bowl
In the same pot with the same oil add the carrots, celery, and rosemary and cook for 5 minutes
Add minced garlic cloves and the cooked sausages back into the same pot and stir to combine
Add the pasta, chicken broth, and spaghetti sauce into the pot and stir until everything is well incorporated
Cover the pot on medium heat and let cook for 15 more minutes or until your pasta is cooked to your liking (be sure to stir about every 3 minutes while cooking to make sure the pasta does not stick to the bottom of the pot)
Add the parmesan cheese, turn off the flame and stir to combine
