Pork Tamales Recipe (Red Sauce)

Ingredients:

For the pork

5 pounds pork

1/2 onion

5 garlic cloves

1 tablespoon salt

2 1/2 liters water or 10 cups of water

For the salsa 

3 tomatoes (or 1 pound)

10 chiles california

1/4 onion

2 garlic cloves

1 teaspoon ground cumin

1 teaspoon salt

For the masa

6 cups corn masa flour

1 packet of corn husks

1 cup lard

1 tablespoon of baking powder

1 tablespoon salt

*this recipe makes approximately 30 tamales
